Thanksgiving soup recipes make a great addition to your holiday
meal or a fantastic way to use up some leftovers. With turkey flavoring
as a key ingredient, these soups will warm you up for Thanksgiving.

Turkey
Vegetable Soup with Herb Dumplings
This one takes some time to cook but
will be well worth the
wait. Put this in well before the turkey so that it's done at about the
same time. Or make this as a great left over soup. With the dumplings,
this soup filling enough to be a meal in itself.

Ingredients
- 8 Cups turkey broth
- 4 Cups roasted turkey meat, skinless
- 1 (10 oz) can of diced tomatoes
- 1 Celery stalk (medium)
- 1 Carrot (medium), diced
- 1 Turnip, peeled and diced
- 1 Onion (medium), diced
- 4 Teaspoon dried parsley, divided
- 1 Bay leaf
- 1 1/2 Cups flour
- 2 Teaspoon baking powder
- 3/4 Teaspoon salt
- 1/2 Teaspoon dried rosemary
- 3 Tablespoons solid shortening
- 3/4 Cup milk

Directions
- Place the turkey broth into the crock pot.
- Place the diced tomatoes, celery, carrot,
turnip & onion in the crock pot.
- Sprinkle in 2 t of the dried parsley.
- Place the bay leaf into the mixture.
- Cover and cook on the low temperature setting 6
hours.
- Place the turkey meat into the crock pot, cover
and cook on low for 1 hour.
- Place the flour, baking powder, salt, rosemary
and remaining parsley into a bowl.
- Cut the shortening into the dry ingredients
with a pastry cutter until the mixture becomes coarse.
- Add enough of the milk to the flour mixture to
moisten it but
leaving the mixture thick enough to make mounds on the end of a spoon.
- Drop the mixture by spoonfuls into the crock
pot.
- Cover, place the temperature setting on high
and cook for 20 without lifting the lid.
Makes 8
Servings
When adding the milk to the flour mixtures just add a little
bit at a time. This will help in making sure the dry
ingredients are
moistened but still remain thick.

As an alternative to this soup, try using a whole turkey. Just add
the turkey at the beginning. Then after 7 hours of cooking, remove the
turkey and separate the meat from the bones. Place the meat back into
the crock pot and then continue on with the steps for the dumplings.

Almond
Wild Rice Turkey Soup
Use your roasted turkey meat for
this warm and tasty Thanksgiving soup recipe.
Ingredients
- 2 Tablespoons butter
- 1/2 Cup dry wild rice
- 6 Cups turkey broth
- 1/2 Cup minced onion
- 1/2 Cup celery, chopped
- 2 Cups light meat roasted turkey, chopped
- 1/2 Cup slivered almonds
Directions
- Place the butter into a small skillet over
medium heat.
- Allow the butter to melt completely then add
the dry rice.
- Reduce the heat to low and stirring
occasionally sauté the rice for 10 minutes.
- Remove the rice from the skillet and place in
the crock pot.
- Pour in the turkey broth and stir.
- Add the onion and celery and stir to combine
well.
- Set the heat setting to low, cover the crock
pot and cook 4 hours.
- Add the turkey meat and continue cooking on low
1 hour.
- Ladle the soup into bowls and top with the
slivered almonds.
